Collections is important For organization and provides a way to animate multiple Shots in your Scenes a little easier. You can also use instances and Collections to save modeling time, and have faster renders.

Well, interesting to note, This guys shots are movie level quality.  He's using compositing for sure with the different layers of background, mid ground, and the street with the cars.  Sort of reminds me how lucas had the motion control rigs to shoot the different elements with the same camera motions. 

Sculpting in blender is like zbrush.  People have sculpted fantastic things in Blender.

1. You can use the wireframe node material in shaders.  Use A mixrgb node and  Use an emission node to make the wireframe glow.  Turn on bloom in the Eevee settings.
